Cooking Classes

    

4 hour cooking class: Complete preparation and instruction for meal including; use of equipment and ingredients, sauces and stocks, meat and vegetables, timing, sweets, chef tricks, presentation.

3 course meal, appetizer, entree, dessert

Wine pairing discussion. Tasting / pairing available.

Present and enjoy the completed meal with a guest where you can show off your new skills

The details

1. Classes are held once per month on a Monday night.

2. Pricing varies depending on whether for an individual or a group. There are discounts for groups and the discount will vary depending on how many people are in the group. On occasion the price may be affected by the use of gourmet ingredients. Please ensure you are clear on the pricing for the date you have booked in advance.

3. The cooking lesson is 4 hours. 3:00 pm to 7:00 pm. The guest joins you for dinner at 7:00 pm. The evening is usually over around 10:00 to 10:30 pm.

4. The event is small, intimate and a lot of fun. Our approach is casual, instructive, hands-on with a lot of laughter and camaraderie.

5. All food costs are included in the price. The only thing not included is wine and alcohol, taxes and gratuity.

6. Menu and recipes will be provided for you to take home.

7. Please wear comfortable flat shoes with a non-slip sole. Running shoes are acceptable. Keep your jewellery to a minimum. Chef coats and aprons will be lent to you for the lesson. It is best to wear a light shirt as the chef coats can make you warm.

8. Let us know in advance If you have a food allergy.

9. A deposit of $25.00 is required when booking. The deposit will be refunded in full up to two weeks before the event. After that it is non-refundable.

10. For one person cooking and one guest after the cooking lesson for dinner the price is $180.00

Rôti d'agneau

Herb roast lamb finished with a Pommery mustard jus. Presented with potato and seasonal vegetables

Savory shrimp coated in batter and fried to a golden brown, presented with a rémoulade dipping sauce.

New Orleans Oyster Patties
Diced oyster in a picante cream sauce presented in flaky pastry shell

Cabbage Pepper Slaw
Julianne of cabbage, carrot, sweet pepper in a sweet and sour vinaigrette presented on a bed of greens

Corn Chowder
Creamy corn chowder dressed with crispy fried pork belly garnish

Entrees

Jambalaya
A one pot dish made with chorizo, shrimp, vegetables and rice.

Carbonnades à la Flamande
Black Angus striploin cubes and onion braised in beer served with boiled potato

Blackened Sole
Blackened sole served up with just the right touch of spices and flavor, presented with dirty rice and old fashioned green beans.

Southern Fried Chicken
Dredged in buttermilk and seasonings served with dirty rice and old fashioned green beans

New Orleans-style Stuffed Lamb
Lamb stuffed with a mixture of bread, herbs and Pommery mustard, and smoked bacon accompanied by potato and vegetables

Dessert

Chocolate and Crème de Menthe ice cream parfait

Sweet, dark pecan filling in a flaky pastry pie with fresh cream

Bananas Foster made from flambéed banana and vanilla ice cream

Each quarter we review our menus to ensure they are offering the best of the current season. Watch for our new menu to be introduced on February 23, 2010. We have been visiting local farms and have come up with a menu that we are sure you will love...local beef and vegetables, Omega-3 pork, a gourmet burger, and many more items.

Join us for The Tate of Downtown Brampton where you will have the opportunity to try some scrumptious Aggie Martin meals at a bargain price and review the new menu.
