Aggie Martin is a traditional French restaurant, full of life, serving the fresh and basic dishes of France's everyday cuisine.

One of the things we love about France is the diversity in climate, soil, terrain and it's multi-cultural historical influences.

You can be in the north-east region where there is a Swiss-German influence and the food is completely different than the Cote d'Azur where there is a heavy Italian influence or the Languedoc region where the spices remind you of Spain.

Of course, the flavour influences for each region are driven by the basics in agriculture; soil conditions, climate, altitude etc. In addition, France is a country so rich in historical events - invasions; Royalty from Hungary, Germany, Italy, Vikings... with everyone contributing their preferred meals and flavours.

The result is a completely unique culinary experience from one area to the next. This is the experience I want to share with our customers. I want to offer all the best that France has to offer. I want you to be able to follow a map and leave knowing you have spent the evening in the Midi-Pyrénées or Brittany or Paris.
